How was your weekend?

Mine started off with a trip to New Haven, CT to visit Panera Bread’s test bakery. There I met Lindsay, Jennifer, Zoe, Bree, Nicole, and the head baker, Tom. It was my first time meeting fellow food bloggers. Finally, people who understand my bizarre life!! I’m pretty sure my friends are tired of me talking about pie crust, props, and light reflectors.

We spent the day with Tom Gumpel, head baker of Panera Bread. It’s a test bakery, inventing the idea of “small batch baking” for Panera locations. There we got to sample a ton of treats and even get our hands dirty making soft pretzels, bread pudding (made with brownies!), toaster tarts, strawberries ‘n cream scones, belgium waffles, sweet waffle fries, and so much more.

I came home on a sugar high and it was all totally worth it.

Easter was full of great food as well – key lime pie (recipe in my cookbook), green bean casserole, deviled eggs, ham, cinnamon rolls, and coconut cream pie. My future sis-in-law made the coconut cream pie and I told her to send me the recipe ASAP. I’ll have to share it on my blog sometime. Seriously, the best.

After all of this indulging over the weekend, I am desperately craving some vegetables with a little healthy chocolate energy bite on the side.

Last year, I made these chocolate truffle energy bites more than any other recipe on my blog. Truly amazing. So convenient to grab when you want something sweet and healthy. I eat a couple of them before heading out for a run or workout. Another before bed… when my sweet cravings are usually in overdrive!

Naturally gluten free, no refined sugars, and full of chocolate taste without a sugar crash. Last night, I made a batch again but added a little peppermint extract. I also switched up the nuts and added a bit of maple syrup. Oh my gosh, these are even better than the original! If you love mint chocolate, these little bites are right up your alley.

You’ll only need a few ingredients to whip up a batch: dates, walnuts, almonds, peppermint extract, a touch of maple syrup, and cocoa powder. That’s it! I find that soaking the dates in a little warm water for 10 minutes really helps move things along in the food processor. I highly recommend doing that.

You’ll start with the nuts first – pulse until they’re broken down into coarse crumbs. You don’t want to fully blend them or else you’ll end up with a nut butter. Then, add the remaining ingredients and blend until a sticky, thick dough is formed.

By the way, this is the food processor I have. It doubles as my blender and is a very affordable option serving as both. I even use it to grate carrots for carrot cake and mash bananas for banana bread.

So once a dough is formed, scoop the dough and roll into a smooth ball with your hands. I rolled a few energy bites into cocoa powder and left a few others plain.

These simple mint chocolate energy bites are full of mint chocolate fudgy flavor! However, if you’re looking for an extreme chocolatey taste, then these aren’t for you. They taste like mint chocolate, but are made with dates. So don’t expect a super indulgent treat! I like to think of them as a healthier alternative to a box of chocolates.

I love how simple and rich-tasting these bites are! Bonus points that they are made with whole, natural ingredients, and do not contain a trace of refined sugar. These are a great substitution to store-bought granola bars. You have complete control over the ingredients!

Mint Chocolate Energy Bites

Healthy, gluten free, naturally sweetened mint chocolate truffles made from good-for-you ingredients. Get your chocolate fix without the sugar crash!

Yield: 15 bites

Ingredients:

  • 1/2 cup walnuts (I used unsalted)
  • 2/3 cup almonds (I used unsalted)
  • 1/3 cup unsweetened cocoa powder
  • 2 Tablespoons pure maple syrup
  • 9 Medjool dates, soaked in warm water for 10 minutes
  • 1/4 teaspoon peppermint extract

Directions:

First, make sure your dates are soft by soaking in warm water for 10 minutes. Make sure you drain them and chop in half before using.

Pulse the walnuts and almonds in a food processor until they are coarsely chopped, as shown in the photo above. Then add 1/4 cup cocoa powder, maple syrup, dates, and 1/8 teaspoon peppermint extract - in that order. I usually start with 1/8 teaspoon peppermint extract and then add a little more (up to 1/4 teaspoon) if I feel they need it. Blend for 4-5 minutes or until a thick oily “dough” is formed, as pictured above. The dough will be oily from the nuts. You may have to scrape down the sides of the food processor a few times to get all of the dry ingredients to the bottom. If the dough is too dry, add more maple syrup and/or dates.

Once a dough is formed, scoop the dough (about 1 Tablespoon each) and roll into a smooth ball with your hands. If rolling into cocoa powder, spread the remaining 1 Tablespoon of cocoa powder onto a plate and roll the moist dough ball around to fully cover. Store bites in the refrigerator for up to 7 days.

*These truffles taste like dark chocolate and are not overly sweet. You may add more dates and/or maple syrup to the mixture to sweeten up, as well as a little more nuts to keep the same texture.

*Feel free to play around with the kinds of nuts used. I'm unsure of any nut substitutions.
