Healthy Peanut Butter Chocolate Energy Bites

Description

Healthy energy bites made from 5 simple ingredients. Perfect for on-the-go!


Ingredients

  • 2/3 cup creamy peanut butter
  • 2 Tablespoons honey (or maple syrup)
  • 1/2 cup + 2 Tablespoons old fashioned rolled oats
  • 1/4 cup ground flax
  • 2 Tablespoons mini chocolate chips
  • optional: dash of salt to taste and dash of ground cinnamon
  • optional for rolling: cocoa powder, cinnamon sugar, melted chocolate, or toasted coconut

Instructions

  1. In a small bowl, melt the peanut butter and honey in the microwave in 10 second increments, stirring after each increment until completely melted and combined. Set aside.
  2. In another small bowl, combine the oats and ground flax. Pour peanut butter/honey mixture over dry ingredients and stir until fully combined. Add more oats if the mixture is too moist. Stir in the chocolate chips, which will slightly melt upon contact.
  3. Add salt and/or cinnamon to the mixture if you prefer. Roll into 14 balls. I rolled the balls into cocoa powder, but that’s optional.
  4. Store the bites in an airtight container at room temperature for up to 3 days or in the refrigerator up to 1 week. Bites freeze well for up to 3 months.

Notes

  1. Gluten Free: Bites are gluten free if using certified gluten free oats.
  2. Customize These! These bites are highly adaptable. Add in you favorite nuts or seeds. Add more oats if the mixture seems too moist and likewise, add more melted peanut butter & honey if the mixture seems too dry and crumbly.

    1. Sometimes I see healthy ball and granola bar recipes like this that call for the STRANGEST ingredients and stuff I never have in my kitchen. Like xanthan gum, protein powder, brown rice syrup, erythritol and all this other crap that the normal human being has never heard of. So yes, these are a WINNER! lol

    Sally they look awesome. I went through a phase of ball-making and small bites for a couple years. It sort of coincided with when Skylar was a toddler and the little bites were perfect for her little hands. They are a little more time consuming to roll out & that’s why I don’t make as many anymore but yours have me tempted because they look so good!

    1. Hi Fairlie! No, I haven’t – we don’t count calories so it’s not something I put on my own website. You may try an online calorie counter tool. I’m in love with chocolate and peanut butter too. πŸ™‚

        These get two thumbs up from the whole family. My 3.5 year old loved it. My 6 year-old loved them. My husband and friend also loved them and the latter prides herself on not typically liking healthy food.

        My recipe changes: I tend to notice an odd taste/smell to ground flaxseed, so I only used about a tablespoon (plus my grinder takes forever to grind them). I put this tablespoon in a 1/4 measuring cup and filled the rest with half chia seeds, and half wheat germ.

        Then I used a knife to chop up a handful of almonds and pecans and tossed them in.

        There was just enough sticky peanut butter and honey to hold them together with the chocolate chips that melted once added.

        Next time I’m doubling up the batch and will probably put them in a pan to make bars, because they were soooo messy to roll into balls (the children loved that part though).

        I also appreciate the photo tutorial you wrote. I never thought of myself as a food blogger (I really love the writing part of blogging), but love to share successes, but because my kids often “help” me, getting a decent photo has been impossible. My tripod might have to get moved to my pantry…

    1. Hi Gloria – you can just leave the flax out. Maybe add about 2 more Tablespoons of oats instead. Enjoy!

    I tried these today my dad who suffers from some health issues that make him unable to eat any pastries/sweets because of all the butter/sugar/flour and OMG everybody loved them, so easy to make and so delicious! And my dad had no problem to digest them at all, i’m so glad! I’ll be making them again, thanks a lot for the recipe πŸ™‚

  22. hi I was just wondering if I could substitute the flaxseed for hempseed? I don’t have flaxseed in my cupboard but I do have a whole bag of hempseed!

    I was wondering if you could use quick oats for these? When should you use quick oats vs. regular rolled oats 9in regards to other recipes)?

    1. Specifically the Healthy Peanut Butter Chunk Oatmeal Bars an d those of the like.

    2. Using quick/whole oats really depends on the recipe, Rachael. Quick oats are more powdery and bind wet ingredients together more so than whole oats. But in this energy bite recipe, you could use quick oats.

  24. I just made these and they were wonderful! I rolled half of the bites in cocoa powder, and the other half in sprinkles. πŸ™‚ There’s nothing like a bright pop of colour to cheer people up. Thanks for the recipe!

  25. Hey Sally!

    I make these often and they’re amazing! I’ve memorized the recipe already. The first time I made them, I rolled them in cocoa powder like you mentioned but they didn’t turn dark and smooth like the ones in your photos. They stayed powdery and you really couldn’t eat them. Any advice?

    1. Sounds like your bites weren’t moist enough– a couple extra teaspoons of honey/pure maple syrup in the food processor will help.

  26. Wondering if i could make these with out flax seeds? I am currently working in china and unable to find flax seeds. Would they still turn out okay? or is there something basical and simple i could use instead?

    Hey sally thanks for posting this! I ate like 5 in one sitting although I did change a couple of things: No chocolate chips, used quinoa instead of flax, and added peanuts. Also i tried rolling them in unsweetened cocoa powder but I found it was much too bitter for me! overall, these are a great pre-study/pre-workout snack!

  29. I just made these and they are WONDERFUL!! I’m trying to stay off refined sugar as much as possible, so these treats are perfect. I used organic natural peanut butter, and I had a hard time getting it to melt in the microwave, so I added some coconut oil and that really helped.

    Also, just an FYI– I have a very hard time finding recipes on your website. For example, I typed in the search: Peanut Butter Energy Bites, and I couldn’t get these to come up, though every other random recipe w/ the word peanut butter in it did come up! I’ve had this happen several times if I don’t know the exact name of the recipe, I can’t really search for it. I wind up doing a google search instead and I can usually find it that way. I’m just wondering if you can tweak the search part to find recipes a little better. (BTW, this happens on other food websites as well– Pioneer Woman is hard to search, but a little easier than yours, so maybe it’s a website issue?)

  30. One of my kids really enjoys eating “dough balls” when I make cookies and is disappointed when I bake the cookies. So we are making these together so he can eat all the dough balls he wants! Ha!Β
