Before we dive into 2018 and a new year of baking challenges, let’s take a moment to appreciate all the time, work, and effort you put into participating in these challenges. 2017 was the first year I started our monthly baking challenge and I’m FLOORED at the response this series received. Thank you, from the bottom of my heart, for making the monthly baking challenges a success. And, more importantly, for making them fun!!! I look forward to them each month.

For anyone just joining us:

What is the Baking Challenge?

  • On the 1st of every month, I post a new recipe complete with a quick how-to video, plenty of tips, tricks, and photos.
  • I want you to bake the recipe yourself during that month! Come back and tell me how it went.
  • If you’d like, share your photos throughout the month using #sallysbakingchallenge on Instagram or email me, tweet me, or upload a photo of your recipe to my Facebook page. I want you all involved!
  • If you don’t like a particular flavor in that month’s recipe, there is an alternate Monthly Baking Challenge recipe.

Scroll through #sallysbakingchallenge on Instagram. This community is not only special, but massively talented. I LOVE seeing all your photos of the recipes this year. I’ve said it a million times, but you inspire me. I put together a few collages of all the December baking challenge pictures I received through email, on my Facebook page, on Instagram, or in my Facebook group. Look at all these beautiful cookies!

And this was the first time many of you worked with royal icing. It’s incredible.

January Baking Challenge

I received many requests for this one. Bread. Yeast. Rolls. Ahhh! We’re kicking off 2018 with a deep dive into bread bowls. This bread bowl recipe doubles as a basic dinner roll, pizza crust, and crusty bread recipe to always have on hand. It’s straightforward, versatile, requires little ingredients, and is completely manageable for yeast beginners.

This month you will conquer your fear of yeast.

  1. I’ve always wanted to try making a baked Alaska but the physics of it scares me 😀
    Only discovered these challenges this December, excited to start this year!

  2. I think it’d be great to do pastries from scratch, or one of those mouse like chocolate cakes that play around with texture

  3. I would love to try to make cannolis for one of this year’s challenges..
    Or also something that would be great to do with or for kids.. Animal cupcakes or something like that 🙂 my nephew(3) is my biggest helper and I think he’d absolutely adore that

  4. I love ALL your recipes, but I’d love to see a matcha green tea cake or cookies! I’m not sure how to use matcha powder successfully, nor am I sure what other flavors might pair well. 

  5. I would love to learn how to make a delicious Brioche or my favorite, a French Napoleon Pastry! Thank you.

I have been itching to make a Schichttorte ever since seeing it done on The Great British Baking Show; however, I am very new to making cakes from scratch and don’t feel prepared for that at all. The several cake recipes I have tried in the last year from your site have all been amazing. Thank you!

  7. I would love to make leche flan! It’s a dessert from the Philippines and it brings back childhood memories.

  9. I would say I would like to do donuts but scones have always scared me! I love pumpkin scones but I have always felt if I try to bake them that they would come out too dry!

  10. I’d love to see a baking challenge for some sort of almond toffee candy! I love almond Roca but I’m nervous to make toffee! Thanks Sally!

  11. Definitely cinnamon rolls with lots of gooey filling! My daughter is an amazing baker and loves your website. 

  12. I would love to see eclairs or croissants (or even better, chocolate croissants!) as a challenge! They seem pretty intimidating, but you have a way of making even complicated recipes easy 🙂

  13. I think some of the older cookbook /family recipes would be awesome like “Grandmas Zucchini Bread” . Recipes/foods you don’t really hear much about anymore but are delicious.

  14. Cooked frostings, particularly the old fashioned kind with flour or starch in it! I’ve got Italian butter cream style down, but cooked WITH starches terrifies me.

  15. I’ve only tried it once at a local restaurant but it’s called Maple Pecan Banana Cake. It’s delicious. Wish I could find a recipe.
