Happy almost new month! June came and went in the blink of an eye and now 4th of July is right around the corner. (Seriously, um, can you believe that?) Besides flip flops and roasting s’mores in the backyard, one of my favorite parts of this season is all the fresh and fruity desserts. Peach crisp, shortcake, and cobbler oh my! But you know the best summer dessert of all? Move over s’mores. It’s all about P-I-E. (though… s’mores pie anyone?)

First, let’s recap what the baking challenge is!

What is the Baking Challenge?

  • On the 1st of every month, I post a new recipe complete with a quick how-to video, plenty of tips, tricks, and photos.
  • I want you to bake the recipe yourself during that month! Come back and tell me how it went.
  • If you’d like, share your photos throughout the month using #sallysbakingchallenge on Instagram or email me, tweet me, or upload a photo of your recipe to my Facebook page. I want you all involved!
  • If you don’t like a particular flavor in that month’s recipe, there is an alternate Monthly Baking Challenge recipe.

Recipe: Blueberry Lemon Icebox Cake

We focused on the creamiest cake of all: icebox cake. Or should I say… the easiest cake of all. I was so happy to read how many of you were pleasantly surprised at how simple icebox cakes are. (Sidenote: if you know how to layer graham crackers and whipped cream, you know how to make icebox cake.) I made it for you on Facebook LIVE so you could really feel inspired to make it at home.

Browsing through the hashtag on Instagram, I see dozens of your blueberry lemon icebox cakes and I’m falling in love with this epic summertime dessert all over again. I really admire some of your variations with different fruits + fillings, too! Totally trying raspberry next time.

July Baking Challenge

Now let’s chat about July’s recipe. We’re kicking off a new summer month with my favorite baked good: pie! I know making pie completely from scratch can be intimidating and, well, downright daunting. BUT I hope I can show you this month that it truly isn’t all that difficult. If you use a trusty recipe and take your time– I promise you’ll enjoy not only the result but the whole process as well. Baking pies from scratch is so satisfying!

I’ll publish the recipe on my blog tomorrow where I’ll walk you through the process with plenty of step-by-step pictures and a new video so you feel confident making it in your own kitchen. ALSO!!! I’ll be making it on Facebook Live tomorrow at 1pm ET just in case step-by-step photos aren’t enough. I know I’m a super visual learner and video tutorials always help me out!

  1. My very favorite is apple pie made with granny smith apples. I pile the apples way high in the pie dish so that it seems like they are going to overflow. I like to brush the top crust with milk and sprinkle pale green sugar on it. Delicious!

  2. I’m actually not crazy about the entire pie just the filling! My favorite would be cherry but my husband LOVES apple and begs me to make it all of the time. 

  3. Oh my Gosh I can’t choose… I love them all 
     I think my favourite  are S’mores brownies pie ( my kids favourite ) and key lime pie( my husband favourite). 

  4. My favorite pie is a Marionberry pie! It’s a type of blackberry and it’s so good!

  5. My favorite pies are pumpkin and apple! I do love pecan pie too!! It is truly hard to pick only one. I loved your great pumpkin pie. I made that pie this past Christmas for the first time. It really was the best pumpkin pie I have ever had!!

  6. I would say strawberry pie… imagine the gooey tangy sweet strawberries with a nice crust and some vanilla whipped cream or vanilla ice cream on top! <3

  7. Peanut Butter!!!!!!! No Bake PB pies are the PERFECT summer treat!!! Chocolate and PB and extra peanuts (or Reeses Pieces or crushed Reeses PB Cups or ALL THE THING) on top is heaven.

  8. My favorite pie is just a good old fashioned apple pie with vanilla ice cream! Mmmm mm good!

  9. I love almost all pies out there, but There is something about the classic applie pie with a scoop of vanilla ice cream that i just love. It’s a classic for a reason i guess

  10. Hello from England. Apple pie……no wait pecan pie…..nope definitely apple…..I think 😉 with lots of hot custard yummy!
