I’m a huge fan of cooked quinoa. I love throwing it into a big pot of chili, adding it to soups, or enjoying it with our Chinese take-out instead of white rice. Quinoa is a great gluten-free source of protein, iron, and fiber. It’s also a quick way to get in a serving of whole grains. I also love to make granola or crispy veggie/cheese patties with it. Simply put, quinoa is so nutritious and even more versatile!

Here is how I cook quinoa.

Total Time: 30 minutes

Ingredients:

  • 2 cups (340g) well-rinsed, uncooked quinoa
  • 3 cups (720ml) water
  • 1/2 teaspoon salt

Directions:

  1. Combine uncooked quinoa, water, and salt in a medium saucepan. Bring to a boil, cover, decrease the heat, and simmer for 25 to 30 minutes, until the quinoa is tender and you can see the little quinoa "curlicues."
  2. Cooked quinoa stays fresh for up to 6-7 days in the refrigerator or 8 months in the freezer.
