
I think I found my new favorite cupcake. When there’s chocolate AND snickers AND chocolate mousse involved, you know it has to be good.
What is crazy is that this indulgent, over-the-top cupcake all starts with a BOX! I often hesitate to start my cupcakes form boxed mixes because the result does not taste homemade at all. However, by modifying the ingredients called for on the back of the box, we can make boxed cake mixes truly taste original.

Biting into one is like an over-the-top chocolate explosion your tastebuds. These cupcakes are not for the faint of heart!
I filled my cupcakes with a decedent two-ingredient chocolate mousse. Two ingredients… who knew it was so easy? I surely didn’t.
The mousse only took me 4 minutes to make!
After filling the cupcakes with the chocolate mousse, I swirled more of it on top. Then, I sprinkled on oodles and oodles of chopped Snickers Bars. Feel free to use any favorite candy bar.
These show-stopper cupcakes will look and taste like you slaved in the kitchen all day.

Snickers Chocolate Mousse Cupcakes
makes 24 cupcakes
Cupcakes:
- 1 box Devil’s Food Cake Mix
- 1 small box Jello Chocolate Fudge instant pudding mix
- 4 eggs
- 1/2 cup vegetable oil
- 1 cup milk (I used 1%)
- 1 cup sour cream
- 2 cups heavy whipping cream
- 2 cups milk chocolate chips
Preheat oven to 350°F. Line a 24 cupcake tin pan with liners (or two 12-cupcake pans). Using a stand alone or hand held electric mixer, beat together the cake mix, pudding mix, eggs, oil, milk and sour cream. Beat until well combined, about 2 minutes. Scoop the batter evenly in all 24 cupcake liners. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Remove the cupcakes from the tin and let cool.
While the cupcakes are baking, prepare the mousse by melting the milk chocolate chips in the microwave. Melt for 30 seconds, remove and stir. Place back in the microwave for 30 more seconds and stir. The chocolate chips should be completely melted. If not, continue to melt in 30 second increments. Set aside to cool. Whip the heavy cream with a stand alone or electric handheld mixer until it looks like whipped cream and stiff peaks form. Fold in melted chocolate chips into whipped cream until it is all evenly combined.
To fill the cupcakes, transfer batches into a piping bag. Once the cupcakes have cooled, press the tip of the piping bag into the center of the cupcake (about 1-inch deep) and squeeze while pulling the tip out. (You may certainly skip this step and simply frost the cupcakes with the mousse.)
Using a knife, frost the cupcakes with the remaining mousse and sprinkle with chopped Snickers pieces.
These chocolate mousse cupcakes would undoubtedly be delicious without the chopped Snickers bars on top, but they add a nice texture and really take the cupcakes to the next level.
If you’re looking to give your dessert that little something “extra,” I suggest throwing your favorite candies on top:

Love love love doctored up cake mixes…it’s really the only way I make cake/cupcakes too! And I made that 2 ingredient mousse a few months ago and I just love how absolutely easy and delicious it is!!! But in and on a cupcake topped with snickers…so incredibly divine!!!!

and these look amazing…your description of chocolate mousse is perfect…whipping cream and chocolate folded in. I remember my mother making mousse but there were eggs and lots of stovetop action and it was a real pain. I like your way much better.
And the piping bag, eh? Gah! So much mousse stuck to the bag sides I bet. I wouldn’t want to waste a drop but these were worth it!

Averie, I had no idea chocolate mousse was SO easy. I’m eager to try it with white chocolate chips next. Or butterscotch chips?! I wonder how that would taste! No eggs, no stovetop! I just made that same mousse for a cake last week – it is SO FREAKIN’ AWESOME. These cupcakes are insane. I must try that cupcake recipe. I love using a box mix – I trust them to be soft and delightful.

I made these tonight, except I substituted chocolate mousse yogurt and 1 tsp baking soda for the sour cream. I also went on over to your salted caramel frosting recipe and adapted that a bit to make salted vanilla buttercream frosting. This will definitely be a treat everyday for the rest of the week!

i just finished making the cupcakes from Kevin and Amanda’s site minus the Snickers and the are AWESOME! My co-workers went crazy for them. Besides the chocolate recipe I made the cake using yellow cake mix with vanilla pudding and used lemon and strawberry mousse in the center with q vanilla bean icing. Haven’t tried them yet, but they look yummy!

I had a problem with the mousse – I whipped the cream until stiff peaks formed with the whisk attachment of a stand mixer, as I’ve done many times before. That part was fine. But when I whipped the chocolate in (with the stand mixer), it didn’t look as smooth as yours, and the mousse became super watery. The chocolate chips were melted (or so I thought) but still a little bit warm when I folded it in. Any ideas where I went wrong?
Other than that, they were awesome! I just made some buttercream frosting for the topping.
hi there, debbie! did you wait for the chocolate to cool and get back to room temperature? if the chips were completely melted and the chocolate was cool, i can’t imagine where the chunks would come from. Sorry it didn’t work out for you! Buttercream solves all problems though right?!
I was just reading up on melting chocolate, and I think I figured out what I did! I think I scorched the chocolate, which is why it wasn’t smooth, and which is why it didn’t blend well with the cream…
Just thought I’d provide the update!
