Happy almost new month! June came and went in the blink of an eye and now 4th of July is right around the corner. (Seriously, um, can you believe that?) Besides flip flops and roasting s’mores in the backyard, one of my favorite parts of this season is all the fresh and fruity desserts. Peach crisp, shortcake, and cobbler oh my! But you know the best summer dessert of all? Move over s’mores. It’s all about P-I-E. (though… s’mores pie anyone?)

First, let’s recap what the baking challenge is!

What is the Baking Challenge?

  • On the 1st of every month, I post a new recipe complete with a quick how-to video, plenty of tips, tricks, and photos.
  • I want you to bake the recipe yourself during that month! Come back and tell me how it went.
  • If you’d like, share your photos throughout the month using #sallysbakingchallenge on Instagram or email me, tweet me, or upload a photo of your recipe to my Facebook page. I want you all involved!
  • If you don’t like a particular flavor in that month’s recipe, there is an alternate Monthly Baking Challenge recipe.

Recipe: Blueberry Lemon Icebox Cake

We focused on the creamiest cake of all: icebox cake. Or should I say… the easiest cake of all. I was so happy to read how many of you were pleasantly surprised at how simple icebox cakes are. (Sidenote: if you know how to layer graham crackers and whipped cream, you know how to make icebox cake.) I made it for you on Facebook LIVE so you could really feel inspired to make it at home.

Browsing through the hashtag on Instagram, I see dozens of your blueberry lemon icebox cakes and I’m falling in love with this epic summertime dessert all over again. I really admire some of your variations with different fruits + fillings, too! Totally trying raspberry next time.

July Baking Challenge

Now let’s chat about July’s recipe. We’re kicking off a new summer month with my favorite baked good: pie! I know making pie completely from scratch can be intimidating and, well, downright daunting. BUT I hope I can show you this month that it truly isn’t all that difficult. If you use a trusty recipe and take your time– I promise you’ll enjoy not only the result but the whole process as well. Baking pies from scratch is so satisfying!

I’ll publish the recipe on my blog tomorrow where I’ll walk you through the process with plenty of step-by-step pictures and a new video so you feel confident making it in your own kitchen. ALSO!!! I’ll be making it on Facebook Live tomorrow at 1pm ET just in case step-by-step photos aren’t enough. I know I’m a super visual learner and video tutorials always help me out!

  1. I will always love and adore pumpkin pie. I’ve had it on my birthday every year since I was 13.

    Except the darkest year, the year of the pumpkin shortage. *shudder*

  2. I’m British.  My favourite pie is steak and kidney. 😉

    However, I do love a good apple pie, and I would really like to try peach pie, except that my husband doesn’t like soft fruit.  🙁  Maybe the next time I’m in the States…?

  3. for me it’s Honey Pear Tart!!

    (I know thinner crust so not exactly a pie) but it’s the only ‘technical pie’ I can make and truly enjoy without having to buy store bought steak pie 🙂

  4. Such a fun giveaway Sally! It’s so hard to choose but I think my all time favorite pie is pumpkin! Coconut cream is a very close second! 🙂 

  5. Apple Pie!!! My current obsession is your Homemade Apple Pie with Chia Spices topped with good vanilla ice cream, of course!! 

  6. Shoofly pie is extremely sweet and delicious! One of my favorite memories from a trip to Pennsylvania and learning about Amish culture was eating that. It is sort of like pecan pie in a way–I believe molasses is in both.  

  7. Hi Sally! Being from Europe I haven`t made that many pies as it`s not as popular, but for me the best pie I have tasted was surely Apple-cinnamon crumble pie 🙂
