Superfood Power Smoothie

I can’t imagine summer Sundays without a big brunch. In an effort to keep my June detox going, we made a lightened-up meal this morning. Complete with cheesy spinach quiche, heavy on the spinach and crustless style– try it that way if you’re looking for a protein-packed, low carb option. And a batch of skinny double chocolate muffins for my sweet tooth fix. Though after eating 3… are they even skinny anymore?

Whatever, it’s the weekend. Also my excuse for a couple margs last night.

Additionally, I made a double batch of these smoothies later in the day. I call them power smoothies because they are filled with some of my favorite super foods like apple, spinach, flax, strawberries, and banana. The perfect drink to fuel up for my 100-miles-in-June goal.

Today’s power smoothie recipe combines two of my favorite smoothies in one.

As you can see, there are two different layers. I layered this smoothie recipe for two reasons. (1) Because mixing all of these ingredients together creates one ugly brown/green concoction, horrible for food photography. And (2) layered smoothies taste better. No?

If you don’t feel like rinsing out your blender for each layer, then by all means – throw all of the ingredients in and blend until creamy, cool perfection.

Let’s break down this nutrient-packed smoothie recipe.

One layer is a thick green smoothie made from five simple, nutritious ingredients: spinach, frozen banana, ground flax, almond milk, and 1/2 an apple. Feel free to use kale instead of spinach if you prefer. Don’t worry, you can’t taste the greens with all of that banana and apple. There’s nothing worse than a green smoothie tasting like vegetables in my mind.

The other layer is made from strawberries, frozen banana, and almond milk. The same exact concoction I call Skinny Strawberry Banana Milkshakes. Have you tried those yet? I make one of those more than any other smoothie recipe on my blog. So refreshing, especially now when strawberries are in their peak.

A note on the flax: the ground flax is completely optional! Please don’t make an extra trip to the store if you don’t have any on hand. I keep it around for a little extra omega-3 action. I throw it into homemade granola and on top of salads.

In both layers, frozen banana takes the place of ice and yogurt. I really don’t like putting ice into my smoothies because the end result has a slushie-like consistency. Maybe it’s just me or my blender. Rather, I prefer frozen banana chunks which results in a smooth, creamy, milkshake-like texture. Hopefully you’re hooked on frozen bananas by now, for as much as I talk about them.

I didn’t use yogurt in today’s smoothie recipe because I wanted to keep it dairy-free. If you have any on hand, add about 1/4 cup of your favorite flavor (strawberry or plain greek yogurt* would be great) for a creamier texture. *It would no longer be vegan.

One of these slimming smoothies is so satisfying. And this is coming from a girl who can eat an entire container of hummus and still be hungry. 8 servings? Yeah right. I drank one about 2 hours ago and normally would be gnawing off my arm by now, but am surprisingly still full. Though maybe it’s the feast we ate this morning…

Superfood Power Smoothie

A slim-down power smoothie recipe filled with super foods including spinach, strawberries, flax, and apple. Refreshing, nutrient packed, with no added sugar.


  • 2 large bananas, previously peeled, sliced, and frozen
  • 1 heaping handful spinach (about 1.5 cups)
  • 1/2 of a large apple, chopped (or 1 small – use your favorite variety)
  • 7 large strawberries, sliced
  • 1/2 cup almond milk*
  • optional: 1 Tablespoon ground flax


  1. Make sure you have a strong, powerful blender that will blend up the frozen banana and apple. I like this Ninja or this Vitamix.
  2. Peel the apple if you do not prefer the skin to be in your smoothie. I did not peel mine. Blend 1 banana, the spinach, apple, 1/4 cup almond milk, and flax together until smooth. Add more milk if it is too thick. Scrape down the sides of the blender as needed. Pour equally into 2 glasses.
  3. Rinse out the blender and blend 1 banana, 1/4 cup almond milk, and the strawberries together until smooth. Scrape down the sides of the blender as needed and add more milk if it is too thick. Pour the strawberry smoothie on top. Serve immediately.
  4. The layered smoothie look is optional, so you can just blend all of the ingredients together instead. 


  1. Milk: Use your favorite milk, keeping in mind the recipe will no longer be vegan if using cow milk.  I used unsweetened vanilla almond milk.

  1. What is a good substitute for the bananas? I can’t stand bananas and have yet to find a good replacement for them in smoothies.

    1. Flavored yogurt, perhaps – you’ll need a flavor since there is nothing else in the green smoothie besides apple and spinach. Maybe a little ice too because you’ll need something frozen for a thick texture.

  2. Hi Sally — this smoothie was delicious! Thanks so much for posting! I used Kiwi instead of apple, and it still turned out delicious!!
    I have one question… how did you get the colors to layer like they did? Was it really thick? Mine was not super thick, and the red just ran into the middle of the green… still tasted amazing, but did not look like yours (my 6 yr old, was hoping it would look more like yours!!) I’m wondering what your secret to layering the colors was? Thanks for a delicious smoothie! 🙂

    1. Hey Linda! So glad you tried it. The green layer is extremely thick (apples are less watery than kiwi) and the strawberry layer is a little less thick. Try adding another 1/2 of a frozen banana or so to each layer. That will thicken it up too!

  3. Do your smoothies save well in the fridge when they yeild more than on serving?

    1. They do – but I usually put them back into the blender with some ice to blend them up again and get the consistency a little thicker.

  4. This just changed my smoothie world. I have a really hard time getting over the mental block of ugly colored smoothies even if I know I like everything I put in it. I split them up today (and even put kiwi in the green layer to trick myself that the color came from it instead of just spinach) and it was amazing! Thanks for the tip!

  5. I tried this wonderful smoothie and although delicious I didn’t achieve the two tones…my strawberry went straight thru to the green. Can you tell me what I’m doing wrong??

    1. The strawberry layer should be quite thick, which keeps it at the top. Did you change any of the ingredients?
