FEBRUARY BAKING CHALLENGE

February 2021 Sally’s Baking Challenge Recipe: Chocolate Soufflé

Chocolate soufflé was always on my baking bucket list. I took a French pastry/dessert class a couple years ago and learned how to make it, but hadn’t attempted it in my home kitchen until recently. Worth the wait! As long as you take your time, follow the instructions carefully, and don’t make any ingredient substitutions, you’ll be on track for chocolate soufflé divinity. There will be many dish options included in the recipe if you don’t own ramekins. I thought this would be the perfect challenge for February!

Let’s Review the January Baking Challenge

January 2021 Sally’s Baking Challenge Recipe: Homemade Stromboli

I knew this would be a fun and popular baking challenge for January, but never would have guessed the level of participation!! We had over 2,000 participants, one of the most popular Sally’s Baking Challenges ever. The recipe photos poured in within hours of first publishing the recipe. Homemade yeasted dough isn’t always easy, but you took this challenge and added some of the most delicious and creative fillings we’ve ever seen like:

  • a Philly cheesesteak inspired stromboli
  • filled with chopped meatballs + marinara
  • a chicken parmesan inspired stromboli
  • roasted red peppers, onions + mozzarella
  • a reuben sandwich inspired stromboli
  • shredded chicken, buffalo sauce + blue cheese

One of my favorite recipe reviews came from reader Kendra:

“I’ve been wanting a really good stromboli recipe and this is it! I used pepperoni, salami, provolone, mozzarella, green peppers, and fresh mushrooms, then topped with Italian seasoning and fresh parmesan. Insanely delicious! I can’t wait to make this again! Rolling the stromboli is a little tricky but Sally’s directions are very clear and easy to follow so it was no problem. I also made the pizza sauce that Sally mentions. It was very easy and so good!”

We gathered as many homemade stromboli emailed photo entries as we could and included them below. There were literally hundreds!

Congrats Heidi! Everyone’s dishes look amazing.

  3. So many of us are going to love trying our hands at souffle for Valentine’s Day, thank you for the February inspiration! I can’t wait to try- just a little unsure about the ramekins or whatever they are supposed to be baked in. Might have to Amazon Prime home the proper dishware since I don’t have anything currently that I believe would accommodate a souffle.
I just had to say again how incredible that Stromboli recipe is! I have made this almost every Sunday since you posted it and it comes out perfect every time. It’s one of those recipes that really makes you feel like a master chef. My family is always so impressed and thrilled with how the boli turns out, and it’s a blast to come up with different fillings. LOVE seeing how many people attempted them in January, wow what an impact! I’m doing a steak, onion/pepper and provolone version today. THANK YOU for such a fun and easy kitchen project that everyone loves.

    1. Hi Janet – Janet here!! I bet you can find ramekins at your local Target, Walmart or even a nice grocery store like Wegmans!! Good luck!!

  4. I’ve never seen so many stromboli’s at once! What a turnout of bakers! 🙂 Would love to know the ingred and measurements for some of the specialty ones like the Philly Cheese steak filling. YUM! Thank you, Sally, for a great recipe and inspiring us to not be afraid of yeast breads. I’m making your bagels today, again, and the dough is rising perfectly! Can’t wait for fresh bagels. Looking forward to the chocolate souffle!

  5. Congrats Heidi!
What a fun challenge the Stromboli was! My husband loved it!
I’m looking forward to trying the Chocolate Mousse but will admit I am a little intimidated. LOL!!

I made the Stromboli and it was amazing! As a new joiner to Sally’s challenges, I didn’t have enough confidence to send my picture in But I’ll be making the February challenge and sending in my photo:)

  16. Joanne Bennett says:

I really loved the Stromboli recipe. I am from Canada and want to make the whole grain wheat bread that you had posted. It calls for like seven grain cereal. I am not sure what the equivalent of that would be in Canada. Is it a flake cereal or is it like a porridge cereal? I’m wondering if it’s like a Red River cereal. Anyone know? I have passed the Stromboli recipe on to so many people! Everybody loves it!

    1. Hi Joanne, yes it’s like a porridge cereal. I just did a quick internet search and from what I read, I think Red River cereal would be fine here.

  17. Congratulations, Heidi!!!
This was my first challenge to do, and I had so much fun! Cant wait to do the next one.

  18. Oh my gosh so many people made stromboli. I’m eagerly waiting to dive into febs challenge soon. ❤️

  19. What a bunch of talented bakers. Loved this recipe, even if I made it after 5 EST on the 30th . Time to get started on the soufflé before the deadline. I also might have to buy some ramekins…. congratulations Heidi, and everyone on their baking skills!!

  20. The soufflé recipe is so tasty! The recipe makes it so much easier than I thought – I have been so intimidated by making a soufflé and you de mystified it! Love love this recipe!

  21. What a fabulous idea-baking challenges. I made the chocolate souffle tonight and it was so easy and so delicious. I have never made a souffle before but it was divine. My flatmate inhaled it. Thanks Sally

  22. I made the chocolate soufflé recipe and was quite delighted. My first time making soufflés! My ramekins were 8 ounce so mine didn’t rise above the rim. Next time I would double the recipe and use six 8 ounce ramekins. Delicious. I love all of Sally’s recipes that I have tried so far! She is awesome!

  23. christine wagner says:

I made the chocolate souffle for myself and a strawberry one for my husband, as he doesn’t care for chocolate much , but they were both very good and I felt like these were extremely easy to make!
