Let’s take a quick break from dessert and talk pizza. Cheesy, doughy, crispy on the edges, soft in the middle, loaded, homemade pizza.

What’s your favorite kind? For me, nothing beats my sweet & salty apple gorgonzola creation. But this BBQ chicken pizza is in close 2nd place! Sweet BBQ sauce, chopped chicken, red onions, a dash of cilantro, and tons of cheese.

I don’t eat a ton of meat, but when I do – it’s usually BBQ chicken. My birthday dinner every May is BBQ chicken on the grill, I’m a sucker for pulled BBQ chicken sandwiches, and the best salad I ever ate was topped with… you guessed it… BBQ chicken. And Sweet Baby Ray’s is my only sauce of choice.

I made this homemade BBQ chicken pizza last weekend. If you listened to my interview on NPR yesterday (here is the interview online – yes, it was VERY weird hearing myself on the radio!), you heard me talk about burning a pizza recipe. And it was this very recipe.

When I make homemade pizza, I like to get the cheese extra melted and bubbly. I love the sides to get a little brown and the bottom to be extra crispy. To obtain all this goodness, I switch my oven to broil for a quick minute as the pizza is finishing up. I suggest you try it! What I don’t suggest you try is walking out of the kitchen to answer your phone, only to come back finding your pizza burnt to a black crisp with the oven still on broil.

Whoops! Yeah, I make mistakes too.

BBQ chicken pizza round 2 was a huge success though. First, start with my favorite homemade pizza crust recipe. You can either make a regular pizza crust or my whole wheat pizza crust. Whichever you prefer.

For this recipe, I used my regular white flour pizza crust. Soft, fluffy perfection. This crust is one of the most remade recipes on my blog. It’s also the recipe I make the most too! Yep, it’s often pizza night in this tiny apartment.

Homemade pizza crust may sound difficult to you. Why waste the time when you can buy frozen? But trust me – homemade crust is nothing like store-bought, delivery, or what you order at a restaurant. Making pizza crust is a lot like making regular bread, only quicker and well, flatter.  I’ve created a separate page for you to learn exactly how to make my homemade pizza crust. The best part? You can make this pizza dough ahead of time and always have it ready to go in the freezer when pizza night rolls around. Make sure you read the pizza dough recipe for make-ahead instructions.

Homemade BBQ Chicken Pizza by

Before going into the oven, you’ll top the pizza dough with BBQ sauce, chicken, cheese and red onion. Kevin hates BBQ chicken pizza to be overloaded with BBQ sauce, but I love a lot of sauce in every bite. So, I only use about 1/3 cup of BBQ sauce on the pizza itself and drizzle a little more on my individual slices when I’m ready to eat. We both win.

You’ll need about 1 cup of chopped cooked chicken. I simply cook 1 skinless, boneless chicken breast and chop it up into large pieces. If you prefer more chicken, feel free to add more. I like to toss the cooked chicken in a little BBQ sauce right before layering it on top of the pizza; doing so prevents the cooked chicken from drying out.

I use two cheeses on my BBQ chicken pizza: shredded mozzarella and smoked gouda. The smoked gouda was purely for flavor; it pairs wonderfully with the sweet BBQ sauce and fresh cilantro! If you don’t want to make the extra trip to the store, you may leave the gouda out completely and just use mozzarella.

Good news! The onion is completely optional. Add it, leave it out, add more, add less. This is your pizza so just add as much or as little of the ingredients as suggested in the recipe below.

The pizza bakes up very quickly. Again, don’t make the mistake I did and leave the room! Keep your eye on it – it will be done after about 14-16 minutes. If you prefer it a little more brown, bake up to about 18 minutes. Once the edges are browned to your liking, remove from the oven and top with chopped fresh cilantro.

The fresh cilantro on the hot, cheesy pizza knocks every bite out of the park. If cilantro isn’t your thing – no worries! You can leave it off.

The flavors and textures in this pizza are incredible! You have the sweet tang from the BBQ sauce, the meaty chicken, the zesty red onion, fresh cilantro, smoky gouda, soft crust, crispy edges, and ultra cheesy mozzarella covering it all.

Homemade BBQ Chicken Pizza

  • 1/2 recipe homemade pizza crust
  • 1/3 cup + 2 Tablespoons your favorite BBQ sauce
  • 1 cup cooked, sliced chicken breast (about one 8-ounce breast)
  • 2/3 cup shredded mozzarella cheese
  • 2/3 cup shredded smoked gouda cheese1
  • 1/2 small red onion, thinly sliced
  • fresh cilantro, for topping


  1. Prepare the pizza dough through step 11, including preheating the oven to 475F as described in step 8.
  2. Toss 2 Tablespoons of BBQ sauce with the cooked, chopped chicken to coat it. Set aside.
  3. After waiting 15 minutes as described in step 11, top the crust with the BBQ sauce. Add more or less BBQ sauce depending on your taste. Then layer on the shredded mozzarella, then the BBQ-coated chicken, shredded gouda, then the onion slices. Bake for 14-16 minutes. For the last minute, I move the oven rack to the top rack to really brown the edges. That's optional.
  4. Top hot pizza with fresh cilantro. Slice pizza and serve immediately. Store leftover pizza covered tightly in the refrigerator and reheat as you prefer. Baked pizza slices may be frozen up to 1 month. Please see homemade pizza crust recipe for how to freeze the pizza dough.

Recipe Notes:

  1. If you do not have smoked gouda, replace with the same amount of shredded mozzarella. You may leave out the onion and/or cilantro if you do not prefer them.

  10. I made this pizza tonight. I used Trader Joe’s pre made wheat pizza dough. I loved your suggestion for the smoked gouda that was a great addition. I also put some BBQ sauce on my chicken before place it on the pizza. It was delicious!
