May 2020 Sally’s Baking Challenge Recipe: Mini Fruit Galettes
Flexibility with both ingredients and preparation has been ideal this spring season. That’s why I chose mini fruit galettes for the challenge. Endlessly customizable and easy to halve, this recipe was a huge success. With new readers joining us each month, many hadn’t worked with homemade pie crust before. What a treat to dive into the pastry world and come out with individual mini pies in YOUR own flavor choice! We saw you make these every day of the month and your fillings were wonderfully enticing. Apple cinnamon, fresh berries with nuts, blackberries with basil, peach with white chocolate and topped with ice cream, whipped cream, melted chocolate, or caramel– you certainly didn’t skimp on creativity this month!

Though I missed out on making the mini fruit galettes; those brownie ice cream bars look amazing. I’m thinking of raspberry ice cream with them!
An off topic comment – I made your crab cake recipe the other night and both my husband and I couldn’t stop commenting on the deliciousness of them. We are crab cake snobs and these definitely are the best home made ones we’ve had. They rival any Maryland crab house crab cakes we’ve had and we’ve had alot! Can’t wait to make them again. Only adjustment I made was Ritz crackers instead of saltines because I didn’t have saltines in the house. Thank you!
