Let’s take a quick break from dessert and talk pizza. Cheesy, doughy, crispy on the edges, soft in the middle, loaded, homemade pizza.

What’s your favorite kind? For me, nothing beats my sweet & salty apple gorgonzola creation. But this BBQ chicken pizza is in close 2nd place! Sweet BBQ sauce, chopped chicken, red onions, a dash of cilantro, and tons of cheese.

I don’t eat a ton of meat, but when I do – it’s usually BBQ chicken. My birthday dinner every May is BBQ chicken on the grill, I’m a sucker for pulled BBQ chicken sandwiches, and the best salad I ever ate was topped with… you guessed it… BBQ chicken. And Sweet Baby Ray’s is my only sauce of choice.

(PS: it’s embarrassing how quickly we go through this.) 

I made this homemade BBQ chicken pizza last weekend. If you listened to my interview on NPR yesterday (here is the interview online – yes, it was VERY weird hearing myself on the radio!), you heard me talk about burning a pizza recipe. And it was this very recipe.

When I make homemade pizza, I like to get the cheese extra melted and bubbly. I love the sides to get a little brown and the bottom to be extra crispy. To obtain all this goodness, I switch my oven to broil for a quick minute as the pizza is finishing up. I suggest you try it! What I don’t suggest you try is walking out of the kitchen to answer your phone, only to come back finding your pizza burnt to a black crisp with the oven still on broil.

Whoops! Yeah, I make mistakes too.

BBQ chicken pizza round 2 was a huge success though. First, start with my favorite homemade pizza crust recipe. You can either make a regular pizza crust or my whole wheat pizza crust. Whichever you prefer.

For this recipe, I used my regular white flour pizza crust. Soft, fluffy perfection. This crust is one of the most remade recipes on my blog. It’s also the recipe I make the most too! Yep, it’s often pizza night in this tiny apartment.

Homemade pizza crust may sound difficult to you. Why waste the time when you can buy frozen? But trust me – homemade crust is nothing like store-bought, delivery, or what you order at a restaurant. Making pizza crust is a lot like making regular bread, only quicker and well, flatter.  I’ve created a separate page for you to learn exactly how to make my homemade pizza crust. Full of tips and step-by-step visuals so you know exactly what everything should look like as you work.

The best part? You can make this pizza dough ahead of time and always have it ready to go in the freezer when pizza night rolls around. Make sure you read the pizza dough recipe for make-ahead instructions.

Before going into the oven, you’ll top the pizza dough with BBQ sauce, chicken, cheese and red onion. Kevin hates BBQ chicken pizza to be overloaded with BBQ sauce, but I love a lot of sauce in every bite. So, I only use about 1/3 cup of BBQ sauce on the pizza itself and drizzle a little more on my individual slices when I’m ready to eat. We both win.

You’ll need about 1 cup of chopped cooked chicken. I simply cook 1 skinless, boneless chicken breast and chop it up into large pieces. If you prefer more chicken, feel free to add more. I like to toss the cooked chicken in a little BBQ sauce right before layering it on top of the pizza; doing so prevents the cooked chicken from drying out.

I use two cheeses on my BBQ chicken pizza: shredded mozzarella and smoked gouda. The smoked gouda was purely for flavor; it pairs wonderfully with the sweet BBQ sauce and fresh cilantro! If you don’t want to make the extra trip to the store, you may leave the gouda out completely and just use mozzarella.

Good news! The onion is completely optional. Add it, leave it out, add more, add less. This is your pizza so just add as much or as little of the ingredients as suggested in the recipe below.

The pizza bakes up very quickly. Again, don’t make the mistake I did and leave the room! Keep your eye on it – it will be done after about 14-16 minutes. If you prefer it a little more brown, bake up to about 18 minutes. Once the edges are browned to your liking, remove from the oven and top with chopped fresh cilantro.

The fresh cilantro on the hot, cheesy pizza knocks every bite out of the park. If cilantro isn’t your thing – no worries! You can leave it off.

The flavors and textures in this pizza are incredible! You have the sweet tang from the BBQ sauce, the meaty chicken, the zesty red onion, fresh cilantro, smoky gouda, soft crust, crispy edges, and ultra cheesy mozzarella covering it all.

Homemade BBQ Chicken Pizza

Thick style homemade pizza crust topped with sweet BBQ sauce, chopped chicken, onions, cilantro, and tons of cheese. Your soon-to-be favorite pizza!

Yield: one 12-inch pizza

Prep Time: 2 hours 15 minutes

Total Time: 2 hours 30 minutes

Ingredients:

  • 1/2 recipe homemade pizza crust
  • 1/3 cup + 2 Tablespoons your favorite BBQ sauce
  • 1 cup cooked, sliced chicken breast (about one 8-ounce breast)
  • 2/3 cup shredded mozzarella cheese
  • 2/3 cup shredded smoked gouda cheese*
  • 1/2 small red onion, thinly sliced
  • fresh cilantro, for topping

Directions:

Prepare the pizza dough through step 11, including preheating the oven to 475F as described in step 8.

Toss 2 Tablespoons of BBQ sauce with the cooked, chopped chicken to coat it. Set aside.

After waiting 15 minutes as described in step 11, top the crust with the BBQ sauce. Add more or less BBQ sauce depending on your taste. Then layer on the shredded mozzarella, then the BBQ-coated chicken, shredded gouda, then the onion slices. Bake for 14-16 minutes. For the last minute, I move the oven rack to the top rack to really brown the edges. That's optional.

Top hot pizza with fresh cilantro. Slice pizza and serve immediately. Store leftover pizza covered tightly in the refrigerator and reheat as you prefer. Baked pizza slices may be frozen up to 1 month. Please see homemade pizza crust recipe for how to freeze the pizza dough.

If you do not have smoked gouda, replace with the same amount of shredded mozzarella. You may leave out the onion and/or cilantro if you do not prefer them.

    I LOVE BBQ chicken pizza, but I have never made it at home. So…this may have just changed my pizza identity for life. If that even makes sense.

    Ohhhhh my goodness. Barbecue sauce and chicken and smoked gouda (!!) and red onion?! Flavor nirvana, right here. Kevin is so spoiled. I’m not the biggest meat eater, either, but I think I would devour this in about 5 seconds flat. This is amazing. Pinning!     Just listened to the interview, you did great! Been obsessing about the new cookbook since it arrived in the mail last week. :) The pictures are gorgeous! This pizza also looks to die for!     Sweet Baby Ray’s is our one and only too! I have done buffalo chicken pizza, will give this a try over the weekend! Now can it NOT be awesome?! Off to listen to your interview!

    I burnt parchment (?!???) making sweet potato fries last week! Never happened before but I had three trays in the oven because I wanted them all out at the same time…I think the paper was touching the oven wall on one tray. Would that do it?

    I listened to the radio interview last night. I was pretty much smiling the entire time. You have such a sweet voice, exactly how your blog is. Even though people can only hear you, its still like we know how “people-friendly” you are.
    When u said u had burnt this pizza the first time and it smelled nauseating, it was funny! These pics look like u mastered it though. A week ago I mentioned I had never made a yeast recipe, but I went out and bought a lot of packets. Wish me luck!! :P

    I might have to make this just for me, seeing as I have a house full of picky men…
    I have recently discovered gouda and LOVE it!!!
    So I’m thinking this will be delish… I will have to leave off the onions, as they don’t mix well w/ my meds… :0(
    But everything else is fair game!!! Yummy!!!!!!!!!
    And I agree about Sweet Baby Rays… But Sonny’s Sweet BBQ sauce is my favorite… I don’t think y’all have it up north, so Rays is the best choice. Sonny’s is from a Southern restaurant chain and it’s SO good, it’s addicting!!!

    YUM!!! BBQ Chicken Pizza is secretly my favorite, but since my guy hates BBQ sauce (not sure why… probably because it’s too sweet?), I always go with my second-favorite of Hawaiian. It’s his favorite, so that way we’re both happy.     Thank you for this recipe! Made it tonight and my 3 year old old who barely eats anything, ate 2.5 slices and said this is the best pizza! The husband was so surprised that it was made from scratch. Your pictures and instructions are so detailed and makes it easy to understand…you have a great gift ;) also, you’ve helped me overcome my fear of making something out of yeast…the piazza dough turned out well :) one question I have, after putting sauce and toppings on pizza, can it be left out for a while before baking? Or frozen with the toppings? Thanks!

      Hi Elle! I’m so glad that you tried and loved this pizza! And of course, that your 3 year old approved as well. The more you bake with the yeast, the more comfy you’ll get with it. It sounds like you will bake this pizza often! After you’ve assembled the pizza, you can leave it out for an hour or so – or even put in the fridge. I don’t recommend freezing with the toppings on it.

    BBQ chicken pizza is my FAVORITE pizza flavor of all time. Hands down, it’s what I make on most occasions next to pepperoni. I just ADORE BBQ!! I love the thick crust on this, Sally! Sometimes, you just need a thick, chewy crust!

    What a delicious pizza creation, Sally! This one here, happens to be my fave… (also chicken pizza with Alfredo sauce with tons of jalapenos on it). You rocked this pizza– and the crust! I can’t wait until your new cookbook arrives at my front door this week!

    This looks way too good. I think my husband’s favorite thing I make at home is pizza…these toppings will blow his mind! I can already picture the sweetness of the bbq sauce contrasted with the smokiness from the gouda and let’s just say my mouth is watering :)

    This pizza looks amazing!! We love homemade pizza and BBQ chicken is one we have yet to try. I can’t wait for my book to arrive. Amazon said it shipped…hope its here before the weekend because I’m sure it will make for a great read!!

    My pizza crust never seems to brown. The bottom browns just fine but the outer crust stays white. Why is this happening? And how can I fix it?

      Hi Abigail! I suggest leaving it in the oven for a few more minutes to brown the edges.

    Thank you! What a great recipe. I was inspired to try this after hearing you on NPR, and while my family loved the pizza, I wasn’t totally happy with my first effort (my fault, had misread some of the steps) but made it again tonight and it turned out just perfect. Best pizza dough I’ve ever made. Thanks!

    I saw a lot of delicious recipies, and as I was searching of your feed I found this amazing recipe.
    Well, today I decided to try this pizza.
    It is the most delicious handmade pizza I’ve ever taste. Great taste, easy to make and of course handmade.

    I made this last night and it was delicious!! My husband LOVED it. There were no leftovers for today! I’m so happy I found your blog – I make a recipe of yours at least once a week..often more. I have your Oreo peanut butter bark in my fridge chilling right now, this hour cannot go by fast enough!

    I tried your recipe yesterday and it was awesome!! delicious is the least to describe it!! The dough was excellent, even though I was scared how it would end up. I am not calling take out pizza anymore!! My husband and kiddo loved it too!! Thanks
