I’ve been up since 4am and I need a coffee IV. Right now I’m on my way to New Haven, CT to visit Panera Bread’s test bakery. By far one of the coolest things I’ve ever done! I’m dragging Kevin along because the man loves bread and broccoli cheddar soup.

I’m personally a sucker for their apple chicken salad and their cinnamon crunch bagels. Toasted with cream cheese. How are their bagels always so perfect? I’ll ask them today.

To celebrate the fun day and weekend ahead, I’m sharing a margarita recipe. Margaritas are my liquid weakness. Give me a bag of salty chips, a (very) large dish of salsa, and a cold margarita any day of the week. Pure contentment right there.

I made these strawberry kiwi margaritas on Wednesday. We paired them with cheesy taquitos and bean/corn salad. What a meal. It felt like summer despite the 35 degree temperature outside. I’ve complained enough about the cold weather, so I’ll spare you any more. I miss my flip flops.

If you’re looking for a new drink to spice up your weekends (or weeknights- no judging here), this is your recipe. Sweet, sour, ice cold lime margaritas flavored with fresh strawberries and kiwi. A whole lot of picture perfect kiwi.

Kiwis don’t get enough attention. While certainly annoying to peel, their sweet interior are juicy, citrusy, and gorgeous. I personally like to add them to salads. That sounds odd, but don’t knock it ’til you try it.

My favorite use for kiwis is pairing them with strawberries to make refreshing smoothies. Some banana, some berries, splash of milk, and sliced kiwi. So good. But what’s even better is replacing the banana and milk with tequila and lime juice. Trust me on this.

These margaritas are ready in a snap. All you do it put everything into a blender with some ice. Blend until icy, fruity perfection. The hardest part is chopping the fruit, seriously.

Use fresh lime juice here. It took me about 8 limes to get 1 cup.

Try to avoid using bottled lime juice – you’ll taste the difference.

To sweeten the margs, I add a little superfine sugar. Superfine sugar (also known as caster sugar) is granulated sugar that has been ground up into a finer consistency. It is not the same as confectioners’ sugar. I use superfine sugar because it blends much, much easier into the liquid margaritas than regular granulated sugar.

If you don’t mind tasting a few sugar crystals than you may use regular granulated sugar. See my notes in the recipe for making your own sugarfine sugar at home though.

I even whipped up a 2nd batch using agave instead – they tasted perfect. I do not suggest leaving out the sugar – your margaritas will taste like strawberry tequila.

The margaritas are frozen, but aren’t thick in the slightest. Sort of in the middle of being frozen and on the rocks. They go down quite easily… I speak from experience.

I’ve made a ton of cocktails and today’s margarita has to be one of the best. I picture myself making pitcher after pitcher of these in the summertime. Which may get a little dangerous considering how easy they are!

Strawberry Kiwi Margaritas

Turn any party into a fiesta with these sweet and fruity Strawberry Kiwi Margaritas! They're so easy, you'll be making pitcher after pitcher...

Ingredients:

  • 3 kiwis, peeled and sliced
  • 8-10 strawberries, sliced1
  • 1/3 cup superfine sugar2
  • 1 cup lime juice (about 8 limes)
  • 6 ounces tequila
  • 4 ounces triple sec (or any orange liquor)
  • 1-2 cups ice cubes
Special Equipment
  • High-speed, powerful blender (I like this Ninja or this Vitamix)

Directions:

  1. Place everything in a blender and blend on high until smooth. I usually start with 1 cup ice and then add more if I think it needs it.
  2. Rim the glasses with salt (or even coarse sugar) if desired. Just dip the rim into the lime juice then into the salt. Pour margarita into glasses and garnish with fruit, if desired.
  3. This recipe can be suited to your tastes. Want more tequila? Add more. Do you think it needs more lime juice? Add more. Add more/less sugar, to taste. Add more/less fruit as well.

Recipe Notes:

  1. Frozen strawberries work, just use less ice.
  2. Superfine sugar (also known as caster sugar) is granulated sugar that has been ground up into a finer consistency. You can make your own by processing a little more granulated sugar (about 1/2 cup) for 1 minute until it reaches a very fine grain. If you don't mind tasting a few sugar crystals than you can just use regular granulated sugar. You may also use about 1/4 cup agave instead. Add more if you want the margaritas sweeter. I do not suggest leaving out the sugar - your margaritas will taste like strawberry tequila. It's not good!

  2. That’s SO exciting about Panera!! They’re one of my favorite restaurants, and my personal favorite is their strawberry poppy seed chicken salad they offer during the summer. Strawberries, blueberries, mandarin oranges, and pineapple with chicken and pecans. And I could literally drink that dressing! It looked like you had a fabulous time baking and taste testing — so happy for you! 🙂 And funny kiwi story… My dad was the first person to give them to me, and he was too lazy to peel them. So for years I ate the peel because I thought that was normal! Whoops…

I don’t drink much, so I have a question: can I use orange vodka instead of the triple sec? The only bottle of alcohol in my house (other than vanilla, ha) is orange vodka and I need to use it or get rid of it before I move in July!

  13. Oh goodness, do I need a glass of this right now! It’s been so tough leash training Butters lately (it was his 4th day out today and I swear, it’s like the previous training days have simply disappeared from his brain!) so a margarita will definitely do the trick and keep me sane!

    • Oh Chung-Ah! I know exactly how hard it is training little puppies. I helped train my sister’s maltipoo and it was like pulling teeth. Painful. She just wouldn’t get it! It will take some time. And yeah, you’d love these margs!
