Labor Day weekend is always bittersweet for me. Saying goodbye to warm sunshine, pool parties, BBQs, fresh peaches, outside concerts, rooftop decks, sundresses, and flip flo…. actually, I wear my flops well into November. I know, I’m crazy. 
But with the close of August, I can say hello to scarves, boots, pumpkin, and Halloween (my favorite holiday!). After one hot and humid Baltimore summer, I’m welcoming the Fall with open arms this year.
Mini Cinnamon Sugar Pumpkin Muffins
With the close of one amazing summer, and the start of an even better fall, I’m bringing you 10 of my favorite EASY cookie recipes that are sure to be a hit your holiday weekend. Whether it’s a BBQ party, a day at the pool, a sip of a margarita, or a lazy day on the couch, your end-of-the-summer weekend plans will be even better with a cookie or two.

Mini Chocolate Chip Cookie Sandwiches
Using my FAVORITE chocolate chip cookie recipe as the “bread”, you could roll these mini cookie sandwiches in blue & red sprinkles for a festive twist.
A dash of cream cheese in the dough for an ultra soft & creamy-tasting cookie. Plus huge chunks of OREOS!
Rolo Stuffed Peanut Butter Cookies

Without relying on cake mix. 
The cookie my co-workers thought were store-bought!
Soft-Baked Peanut Butter Lovers’ Cookies
SO soft with an explosion of peanut butter goodies.
Thick Oatmeal Raisinet Cookies
Last minute decision to sub chocolate-covered raisins for regular. Best move EVER.
Butterscotch Pretzel Chocolate Chip Cookies
Salty & sweet, chunky & soft. Perfect.
Chocolate Chip Cookie Dough Fudge
Not a cookie… but the dough is obviously the best part. Egg-free cookie dough! No candy thermometer needed.
Soft Andes Mint Chocolate Chip Cookies
The softest, puffiest cookie I’ve ever made. WITH andes mints. (!!)

I would consider it an insult if somebody thought my cookies were store-bought! I’m sure your M&M cookies are much better than the store variety
I was insulted! But then I thought to myself… they really think they taste as good as some store bought cookies can be?? Pretty cool I guess

i’m somewhat excited for fall because the cooler weather will be nice and so will the leggings and boots but i’m going to gain so much unnecessary weight cause i’ll be indoors all the time baking cookies and eating haha

I love this roundup, girl! You can never go wrong with cookies, especially your cookies since they’re always so delicious and beautiful! Personally, I’m a fall/winter girl, so I’m stoked for fall + winter! Leggings, BOOTS, chunky sweaters and tights, and of course, the holidays and holiday food! Plus, more excuse to turn on the oven to bake yummy cookies and warm up

I’m a flip-flop fanatic too. My fascination started at, oh, about age 4 when my mom came home from a trip to Hawaii and was wearing “snapping shoes” (I guess at age 4, the coolest thing about them was the sound they make!) When I broke my ankle earlier this year the most heart-breaking news at my four-week follow-up was that I shouldn’t wear flip-flops for awhile. Never mind this was March; I wanted my flip-flops!
Anyway, love this round-up of cookie recipes, too.

All of these cookies look fantastic! I was camping all weekend, so no cooking baking, but I am saving the list for future use : ) I can’t believe I have never eaten Cookie Dough Fudge, but I see it in my near future!
