My cakes have been turning out very dense with what looks like air holes on the bottoms. What would cause this? I follow your recipes exactly and they taste wonderful – the texture is just dense.
Hi Sue-Ellen! The cake batter could be over-mixed. Make sure to only mix until the ingredients are brought together and not any longer, which can cause a dense cake and air bubbles.

Hi Mary, was it our espresso chocolate chip layer cake by chance? We also use coffee in our chocolate cake, but just as a way to enhance the chocolate flavor (that cake doesn’t actually taste like coffee).

For the Lemon Strawberry Crumb Bars Can i use the frozen shredded butter to mix like with the scones or do I need to cube it with forks (I do not have a pastry cutter or large enough cuisinart to mix.
