How was your Thanksgiving holiday? Our weekend full of food (pumpkin & apple pies, nutella cheesecake, turkey, sweet potatoes, mom’s cranberry muffins), tree decorating, a visit to Longwood Gardens, finding my wedding hair piece. And some HUGE news!

My older sister Sarah got engaged (see photo) to Charlie. He proposed in Rockefeller Center on Saturday night.

After a food-filled and fun-filled weekend, it feels good to be back in Baltimore and back to work. You’re going to see a lot of me this month. I hope you’re ready for some sweets. But first? Pizza!

The month of December will be full of friends, laughter, guests, family, and food. What better way to bring everyone together than with homemade pizza? And umm… these candy cane cookies.

When Kevin and I make pizza at home, he likes to pile on the mozzarella cheese and pepperoni. I, on the other hand, like to pile on the unique toppings and cheeses. Like creamy gorgonzola cheese paired with juicy apples, rosemary, and a touch of honey. No tomato sauce, just sweet salty goodness.

It’s not weird, I promise.

My best friend Marie got me hooked on the combination of salty pizza and sweet honey. A restaurant she visits in Cleveland serves a honey jar with their pizza! Have you ever tried pizza drizzled with a touch of honey? Get ready to be amazed. It is like nothing you’ve ever tasted before. Unless, of course, you’ve tasted it before…

Anyway. The honey goes onto today’s pizza recipe right before serving. So if you think it’s strange, don’t worry! The honey is optional. The other fun toppings? Totally necessary.

This is the tastiest pizza I’ve had in my entire life. Not exaggerating.

The other week I shared my favorite homemade pizza crust with you. I piled it heavily with cheese, just how Kevin likes it. I have been getting rave reviews about this crust! It’s soft in the center, yet crusty on the edges. Chewy and bready, without tasting “yeasty.” And it’s simple!

On a separate page, I provide plenty of in-process photos so you can see exactly how to make the pizza crust at home. I am a visual learner myself, so I’m glad the photo tutorial has been helpful to you as well!

You’re going to need: the homemade crust (recipe below), olive oil, a bit of shredded mozzarella, 8 ounces of gorgonzola (or more if you’re a cheese lover), 1 small thinly sliced apple, and a sprinkle of rosemary. Pile it high onto the dough and bake.

Make sure your oven is hot. Hot hot hot! The hotter, the better. I usually allow my oven to preheat for 30 full minutes as the dough is doing its final rising. Every inch of your oven needs to be very, very hot – so be sure to preheat for the full time. The pizza will take 15 minutes, tops. For the last minute, I move the oven rack to the top rack to really brown the edges.

 Once baked… slice and serve that pizza!

The dough is crusty, yet soft. The mozzarella provides a cheesy base. There’s creamy, salty gorgonzola in every bite. The sweet apples, caramelize ever so gently in the oven. The savory, aromatic rosemary compliments the cheeses and sweet apples. And finally! A light drizzle of honey finishes each bite off.

It’s a cornucopia of tastes, textures, and flavors. But it all works so wonderfully together! It was so good, I had three slices in a matter of minutes of lunch immediately after shooting this! Then more for dinner.

And guess what? There are so many goodies you can add or substitute! Try piling on a few caramelized onionsbacon crumbles, or prosciutto. Use goat cheese or blue cheese instead of gorgonzola. Add some arugulabasil, or substitute a sliced pear for the apple.

Caramelized Apple Gorgonzola Pizza

Prep Time: 2 hours 15 minutes

Total Time: 2 hours 30 minutes

Print Recipe

Homemade pizza crust piled high with creamy gorgonzola, rosemary, caramelized apples, and a touch of sweet honey. Makes one 12-inch pizza or you can make two pizzas from my entire crust recipe and double the toppings listed below.


  • 1/2 recipe homemade pizza crust or whole wheat pizza crust
  • 1 and 1/2 cups (6oz or 168g) shredded mozzarella cheese
  • 8 ounces crumbled gorgonzola cheese
  • 1 small apple, thinly sliced (your favorite variety - I used Honey Crisp)
  • rosemary, to taste
  • honey for drizzling, optional


Prepare the pizza dough through step 11, including preheating the oven to 475F as described in step 8.

Top the crust with the mozzarella cheese, gorgonzola cheese, apple slices, and then sprinkle with rosemary.

Bake for 12-15 minutes. For the last minute, I move the oven rack to the top rack to really brown the edges. That's optional.

Slice hot pizza and serve immediately. Drizzle each slice with honey, if desired. Store leftover pizza covered tightly in the refrigerator and reheat as you prefer. Baked pizza slices may be frozen up to 1 month.

    Weird story – When my brother and I were little kids we always held a marriage ceremony after my family ordered pizza for dinner. We proceeded to try to marry the pizza box, every single time. I never knew why, and I always thought I was just a really weird kid. Then, I met this caramelized apple & gorgonzola pizza and it all made sense. My young self knew this would be happening in my future and was just getting a head start on making sure that it would be bonded to me for-ev-er. Moral of my story: oh my gosh Sally, this looks like… I want it now.

    Beautiful and delicious, Sally! I’m a tomato-sauce fiend, but I could still get onboard with this pizza :) Honey adds such a wonderful, unique flavor to foods, and I’m sure it’s great here! There is a pizza restaurant in Colorado too (Beau Jo’s) that serves honey along with the pizza. It’s mostly for the enormous crust, but I’m sure people put it on the pizza slices themselves too. I’m glad you had a great Thanksgiving, and congratulations to your sister! 😀

    YUM!! Your pizza toppings aren’t weird at all! Gorgonzola and apples is such a perfect salty-sweet combination. My family generally turns to goat cheese and pears as our favorite combo (especially when paired with sun dried tomatoes and sautéed spinach with pasta — so good!). My parents would go to town on your pizza; there wouldn’t be any leftovers!

    First, congrats to your sister!! How fun that the both of your are engaged at the same time!! My only sister (the rest are all boys) is 5 , so I do not think that will be happening over here!

    Second, this pizza! I make the craziest pizzas all the time, but my all time favorite topping is gorgonzola (or blue cheese) and a drizzle honey if I did a fruit or balsamic glaze or buffalo sauce. LOL! I love cheesy pizza! The caramelized apples on this sound amazing. Especially, with the rosemary and gorgonzola!

    Wow. Made this tonight using Trader Joe’s crust (didn’t have time after work to try your homemade crust). We added bacon because we had some that needed to be used before it went bad and we we used blue cheese. It was AMAZING. My husband and I inhaled the whole thing. Might be the best combination of flavors ever. Thanks for the this incredible recipe!

    Hi Sally! Wow! Its so nice to hear that you eat honey with your pizza. Finally, someone who I can relate to! Just one question about the recipe, I am making this for a party and I don’t want to make the pizza dough since it would be time consuming…Can I use the Pillsbury readymade dough instead, and if so, what changes should I make to the recipe?

    I really want to make this I am only concerned on making the dough your recipe for dough is very detailed I just want to make the dough today and save it for Thursday should I just freeze the two balls of dough and take them out & put into fridge to defrost on Thursday?

    Hi Sally! Just wanted to say this pizza is PHENOMENAL! I made it for a special farewell party and it was one of the fanciest and most delicious pizzas I’ve ever made.     We are fans of homemade pizza and calzones in this house. We make dough ahead and sometimes even breakfast calzones and freeze for snacks or easy meals later. My husband loves all pizza! So when we tried this recipe last fall, I was curious what he would think of a meatless pizza? Well, he loved it all the way down to the honey drizzle! The rosemary is a great touch. This is our pizza we crave and we have made it multiple times since our first try. It is delicious roasted on the grill! Thank you Sally for yet another FABULOUS recipe!!!
