You are not lost. I, a bonafide cookie monster and sprinkle over-user, am posting a salad recipe today on this beautiful Sunday morning. It turns out that you are loving my savory food recipes, so I figure I’ll share a little more of my everyday eats with you.

Because with a wedding dress to fit into in 4 months, I can’t live off of nutella cheesecake alone… can I? Hope you’re hungry for some healthy recipes this summer.

This colorful salad has the WORKS. It’s meant for people, like me, who love all the fixings on a salad and not so much all the greens. Think tons of fresh berries, mandarin slices, crunchy almonds, creamy avocado, and lots of protein-packed chicken.

Why, it’s summer in a bowl. (–> quick, name that Friends episode.)

For anyone wondering how Kevin and I are not 500 lbs each, our secrets are self control, a ton of running and biking, lots of veggies, and these salads for lunch. Life’s all about balance and the occasional reese’s pieces sundae dessert, of course.

I own a pink polka dot paring knife, don’t you? Surprisingly enough, this knife is tack-sharp. One of the sharpest paring knives I own. Plus, it’s pretty. Makes a cute gift.

I dress today’s salad with some homemade poppy seed dressing. Besides caesar, poppy seed dressing is my favorite. You could really dress this summer salad with just about anything. Either balsamic or raspberry vinaigrette would be incredible, too.

I made my own poppy seed dressing using Lindsay’s recipe. The flavor is out of this world! She knows her stuff – I’ll never buy poppy seed dressing again.

This fresh, healthy salad is perfect when the temperature start to rise; it’s so refreshing and there’s little work involved. Use leftover cooked chicken, whatever greens you have on hand, and/or feel free to switch up the berries. Strawberries and blueberries were on sale this week for Memorial Day, so I stocked up… and also made two fruit pizzas.

Naturally.

Kevin says he’d like bacon on top of the salad, but I wasn’t about to cook a couple strips in my already horrendously messy kitchen. Also, try sprinkling a little creamy goat cheese on top. It’s my absolute favorite cheese and it would be perfect on this summertime salad.

This recipe will make about 4 decent sized side salads, but can easily be split between two people as a main dish. Especially if you’re a salad “topping” freak like I am. There’s so much going on in this salad, it’s incredibly satisfying.

Strawberry Almond Chicken Salad

This colorful, healthy strawberry almond chicken salad has the works! It's for those of you who love all the toppings on salads... full of juicy berries, crunchy almonds, creamy avocado, chicken, and topped with homemade poppy seed dressing.

Yield: 2 large salads or 4 small

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 6 cups spinach or field greens (I used 3 cups each)
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 3/4 cup mandarin orange slices
  • 1 ripe avocado, sliced
  • 1/4 cup sliced almonds
  • 12 ounces skinless, boneless cooked chicken, chopped
  • poppy seed dressing (homemade or store-bought)*

Directions:

Toss everything together in a large bowl, except for the dressing, until combined. Pour desired amount of dressing overtop and serve immediately.

*You could really dress this summer salad with just about anything. Either balsamic or raspberry vinaigrette would be incredible, too.

*Try crumbling a few strips of bacon overtop and/or adding 4 ounces goat cheese, gorgonzola, or feta cheese.

Yesterday was a huge day for me; we had our cake tasting and I also visited the WBAL studios for another TV appearance on the weekend morning news.

If you tuned in to watch me, thank you so much! While I wasn’t nearly as nervous as the first time, I still had a few butterflies and felt I stumbled over my words. Live TV, answering questions and trying to concentrate on what I was doing with my cake, is harder than it looks!

But the women there make it so easy and carefree. I made my festive, fun Tie-Dye Cake for Memorial Day weekend – this is a cake you have to try this summer! It’s great for any holiday, really. I use my favorite homemade vanilla cake recipe.

    Love the shirt you wore on TV! You’ve probably heard this before, but you’re in mad good shape, especially since your job is to eat dessert!
    Speaking of which, you can too eat Nutella cheesecake for every meal. Try it!
    But I guess when you have a salad this good, you can be healthy too!

    You look great! That’s so exciting…so much publicity for you :) This salad looks awesome; I know my mom would love it. We both like tons of ingredients in salad instead of just iceberg lettuce, tomatoes, croutons, and cheese (which seems to be what a lot of restaurants call a salad, ugh). Your salad IS like summer in a bowl ;) (I don’t know the actual episode title, but isn’t it the one where Joey has Janine/Elle Macpherson as a roommate and she’s putting potpourri and little boxes everywhere?)

    This salad looks amazing! We love chicken salad, especially when fruit is involved. And, I love it that you’re going to be sharing some healthy summer recipes. You read my mind of what I have been hoping for! Of course, I will still be making your vanilla cupcakes and blueberry muffins to go with it! I got on your website this morning before I ran out the door to church to see if anything else could change my mind about a dessert choice (currently going to be your Blueberry Almost Oat Squares) for Memorial Day.     Sally you did an amazing job in your tv appearance. You’re a really natural speaker, engaging and entertaining to watch. I have a media training tip that might help you to reduce your ‘ums’ – it’s all about slowing down your pace just a little bit. Before you start to speak or answer a question take a deep breath. Those three seconds that you’re breathing will give you the chance you need to reset your thinking. When your thinking is on track you’re less likely to use filler words like ‘um’. Don’t worry about appearing to the audience or the person interviewing you like you’ve frozen up – to anyone watching that tiny moment that you’re taking a breath will seem natural.

    Meanwhile, your cookbook just arrived to me here in Australia, I can’t wait to start baking my way through it!

    Gorgeous salad! I love avocados and fruit. In place of chicken for protein I’d add some quinoa, but the almonds do the trick too.

    Great job on your second television appearance. FYI, there are all natural food dyes that you can use. They’re made out of veggies. India Tree Liquid is a great product, and you can create almost any color you can imagine.

    Salad sounds absolutely terrific. I’m going to try it this week. Question on the link to the poppyseed dressing…..it says 1/4 cup olive oil mayonnaise. I never heard of this product. Is this an error? TIA! Keep up the excellent work on perfecting recipes to deliciousness.

    Hey Sally, this salad looks amazing! i made a super summery salad that you might dig since you love goat cheese too, its super easy too just bite size pieces of watermelon, chopped fresh basil, goat cheese and a little drizzle of balsamic vinegar (i used a white peach balsamic but any will do :) its simple but amazing and super summery flavours and colours!
