You are not lost. I, a bonafide cookie monster and sprinkle over-user, am posting a salad recipe today on this beautiful Sunday morning. It turns out that you are loving my savory food recipes, so I figure I’ll share a little more of my everyday eats with you.
Because with a wedding dress to fit into in 4 months, I can’t live off of nutella cheesecake alone… can I? Hope you’re hungry for some healthy recipes this summer.
This colorful salad has the WORKS. It’s meant for people, like me, who love all the fixings on a salad and not so much all the greens. Think tons of fresh berries, mandarin slices, crunchy almonds, creamy avocado, and lots of protein-packed chicken. Why, it’s summer in a bowl. (–> quick, name that Friends episode.)
For anyone wondering how Kevin and I are not 500 lbs each, our secrets are self control, a ton of running and biking, lots of veggies, and these salads for lunch. Life’s all about balance and the occasional reese’s pieces sundae dessert, of course.
I own a pink polka dot paring knife, don’t you? Surprisingly enough, this knife is tack-sharp. One of the sharpest paring knives I own. Plus, it’s pretty. Makes a cute gift.
I dress today’s salad with some homemade poppy seed dressing. Besides caesar, poppy seed dressing is my favorite. You could really dress this summer salad with just about anything. Either balsamic or raspberry vinaigrette would be incredible, too.
I made my own poppy seed dressing using Lindsay’s recipe. The flavor is out of this world! She knows her stuff – I’ll never buy poppy seed dressing again.
This fresh, healthy salad is perfect when the temperature start to rise; it’s so refreshing and there’s little work involved. Use leftover cooked chicken, whatever greens you have on hand, and/or feel free to switch up the berries. Strawberries and blueberries were on sale this week for Memorial Day, so I stocked up… and also made two fruit pizzas.
Kevin says he’d like bacon on top of the salad, but I wasn’t about to cook a couple strips in my already horrendously messy kitchen. Also, try sprinkling a little creamy goat cheese on top. It’s my absolute favorite cheese and it would be perfect on this summertime salad.
This recipe will make about 4 decent sized side salads, but can easily be split between two people as a main dish. Especially if you’re a salad “topping” freak like I am. There’s so much going on in this salad, it’s incredibly satisfying.

Strawberry Almond Chicken Salad
Yield: 2 large salads or 4 small
Prep Time: 10 minutes

This colorful, healthy strawberry almond chicken salad has the works! It's for those of you who love all the toppings on salads... full of juicy berries, crunchy almonds, creamy avocado, chicken, and topped with homemade poppy seed dressing.
- 6 cups spinach or field greens (I used 3 cups each)
- 1 cup sliced strawberries
- 1 cup blueberries
- 3/4 cup mandarin orange slices
- 1 ripe avocado, sliced
- 1/4 cup sliced almonds
- 12 ounces skinless, boneless cooked chicken, chopped
- poppy seed dressing (homemade or store-bought)1
- Toss everything together in a large bowl, except for the dressing, until combined. Pour desired amount of dressing overtop and serve immediately.
- Yes, it's really that easy.
- You could really dress this summer salad with just about anything. Either balsamic or raspberry vinaigrette would be incredible, too.
Try crumbling a few strips of bacon overtop and/or adding 4 ounces goat cheese, gorgonzola, or feta cheese!

Yesterday was a huge day for me; we had our cake tasting and I also visited the WBAL studios for another TV appearance on the weekend morning news!
If you tuned in to watch me, thank you so much! While I wasn’t nearly as nervous as the first time, I still had a few butterflies and felt I stumbled over my words. Live TV, answering questions and trying to concentrate on what I was doing with my cake, is harder than it looks! But the women there make it so easy and carefree. I made my festive, fun Tie-Dye Cake for Memorial Day weekend – this is a cake you have to try this summer! It’s great for any holiday, really. I use my favorite homemade vanilla cake recipe.
