Strawberry Almond Chicken Salad

This colorful, healthy strawberry almond chicken salad has the works! Juicy berries, crunchy almonds, creamy avocado, chicken, and homemade poppy seed dressing.

This salad has it all! Healthy, easy, and full of fresh berries, chicken, avocado and topped with creamy homemade poppy seed dressing.

You are not lost. I, a bonafide cookie monster and sprinkle over-user, am posting a salad recipe today on this beautiful Sunday morning. It turns out that you are loving my savory food recipes, so I figure I’ll share a little more of my everyday eats with you.

Because with a wedding dress to fit into in 4 months, I can’t live off of nutella cheesecake alone… can I? Hope you’re hungry for some healthy recipes this summer.

This colorful salad has the WORKS. It’s meant for people, like me, who love all the fixings on a salad and not so much all the greens. Think tons of fresh berries, mandarin slices, crunchy almonds, creamy avocado, and lots of protein-packed chicken. Why, it’s summer in a bowl. (–> quick, name that Friends episode.)

For anyone wondering how Kevin and I are not 500 lbs each, our secrets are self control, a ton of running and biking, lots of veggies, and these salads for lunch. Life’s all about balance and the occasional reese’s pieces sundae dessert, of course.

I own a pink polka dot paring knife, don’t you? Surprisingly enough, this knife is tack-sharp. One of the sharpest paring knives I own. Plus, it’s pretty. Makes a cute gift.

I dress today’s salad with some homemade poppy seed dressing. Besides caesar, poppy seed dressing is my favorite. You could really dress this summer salad with just about anything. Either balsamic or raspberry vinaigrette would be incredible, too.

I made my own poppy seed dressing using Lindsay’s recipe. The flavor is out of this world! She knows her stuff – I’ll never buy poppy seed dressing again.

This salad has it all! Healthy, easy, and full of fresh berries, chicken, avocado and topped with creamy homemade poppy seed dressing.

This fresh, healthy salad is perfect when the temperature start to rise; it’s so refreshing and there’s little work involved. Use leftover cooked chicken, whatever greens you have on hand, and/or feel free to switch up the berries. Strawberries and blueberries were on sale this week for Memorial Day, so I stocked up… and also made two fruit pizzas.

Kevin says he’d like bacon on top of the salad, but I wasn’t about to cook a couple strips in my already horrendously messy kitchen. Also, try sprinkling a little creamy goat cheese on top. It’s my absolute favorite cheese and it would be perfect on this summertime salad.

This recipe will make about 4 decent sized side salads, but can easily be split between two people as a main dish. Especially if you’re a salad “topping” freak like I am. There’s so much going on in this salad, it’s incredibly satisfying.

My TV appearance! Here is the direct link to the video– also at the bottom of this post.

Yesterday was a huge day for me; we had our cake tasting and I also visited the WBAL studios for another TV appearance on the weekend morning news!

If you tuned in to watch me, thank you so much! While I wasn’t nearly as nervous as the first time, I still had a few butterflies and felt I stumbled over my words. Live TV, answering questions and trying to concentrate on what I was doing with my cake, is harder than it looks! But the women there make it so easy and carefree. I made my festive, fun Tie-Dye Cake for Memorial Day weekend – this is a cake you have to try this summer! It’s great for any holiday, really. I use my favorite homemade vanilla cake recipe.

Thank you again for all your support and encouragement. I wouldn’t have been asked on TV if it weren’t for all of you. And thanks for having me back, WBAL! Here’s the video link – let me know what you think. Please ignore all my “ums” – I need to work on that!

This salad has it all! Strawberries, blueberries, avocado, almonds, chicken, spinach, so healthy!

  1. Hey Sally, this salad looks amazing! i made a super summery salad that you might dig since you love goat cheese too, its super easy too just bite size pieces of watermelon, chopped fresh basil, goat cheese and a little drizzle of balsamic vinegar (i used a white peach balsamic but any will do 🙂 its simple but amazing and super summery flavours and colours!

  2. Congrats! You were awesome! I will totally be making this cake! It looks delicious! I LOVE your blog and always look forward to every new recipe that you put out! I also love that when the desserts are made they are in smaller portions, it does not make so much. As I do not have an army to feed either, it is always perfect! Thank you!

  3. OH, look at you! SO absolutely beautiful!!! If you can stay as skinny as you are with all those delicious sweets that you make, my hat’s off to you! My best friend is my treadmill… 🙂

  4. Another nice job on the TV appearance.

My friend uses the same principle as your tie-dye cake to make camouflage cakes for small boys. They’re always so much fun to cut.

  5. What a beautiful salad, Sally…I think I have everything for it except strawberries and that is easily rectified. 🙂 Definitely on the menu for this week…after we eat through the three spaghetti squashes in my fridge…! 🙂

Ohhhh…and I love love LOVE what you chose to make on TV! I wish I had checked your blog over the weekend as I probably would have given these a try since I was out of town and had four teenage nephews as a captive audience. 🙂 Congratulations on being invited back! I suspect there will be more appearances in the future! Whoa…maybe you’ll get your own segment on there…how cool would THAT be?

I have to thank you – I made your cinnamon swirl banana bread with glaze and it turned out SO fabulous. I got up early and surprised my parents with the warm bread when they came downstairs in the morning. I am pretty sure I am a superstar now. lol!

    1. You are absolutely a super star Christine! I love that banana bread recipe. It’s always, always a hit! I would love a regular TV spot, once my nerves calm down. Maybe another visit back or two and I’ll become a pro. Without getting nervous!

  6. The salad looks so tasty and I’m loving the different textures from all the fruits and nuts. Congrats on another television appearance, how exciting!

  7. I have everything in my frig to make this, including a little bacon and goat cheese, yum I can’t wait for lunch tomorrow! These pictures look amazing, and congrats on another TV appearance!!

  8. YOU WERE GREAT ON TV SALLY!! And I am loving this bright, cheery salad! I never think to throw strawberries into my salad but I think I’m going to start doing so immediately! 😀

  9. I was so inspired by your TV appearance and recipe, that I created the cake with blueberries and strawberries like the host suggested!
P.S. I live in the Baltimore/WMA area and would LOVE to learn more about how you got your start on SBA!

    1. Hi there! Here are a few posts about how I got started.

  10. Hi Sally, congrats to this beautiful recipe. On saturday I prepared this salad and sure will repeat soon. Instead of strawberries I used cherries and added some tomatoes ( can’t live without tomatoes).

Your blog is really great and fin to follow.

    Sunny greetings from Madrid (Spain)

  11. You’re so cute and festive in your latest TV appearance Sally!! You must have made a super sweet first impression for them to ask you back. I wouldn’t be surprised if they offered you a regular slot! 🙂 And your salad definitely reminds me of my favorite one from Panera: their strawberry poppy seed chicken salad. So sad that they only offer it during the summer, so it’s nice to have yours that’s so similar that I can enjoy once they whisk theirs off the menu!

    1. Yep! Both hardcover and ebook. It’s available on Amazon in both forms, or from my publisher directly:

  12. I love your blog. Thank you for keeping me inspired to bake. And, I just bought the ingredients to make the glowing skin smoothie, so I am looking forward to trying it out.
My question is, where did you get that polka-dot pairing knife? I love it and want one too!

    1. It was a gift, actually! Here is one on Amazon I just found though…

  13. Woah! This recipe is simply the best salad I’ve ever had. It has everything I love (strawberries! almonds! avocado! goat cheese!). I’m not fond of chicken in salads so I used goat cheese instead, as you suggested. I also made an express, healthy dressing with 100g plain Greek yogurt, 1 tablespoon lemon juice, 1 tablespoon olive oil and 1 tablespoon poppy seeds. It was perfect! Thank you for this recipe.

  14. Oh, this was so delicious! I used pecans instead of almonds and I had a few pumpkin seed/dried cranberry mix left over from another salad I added.
