For pie-enthusiasts like myself, Thanksgiving is our Super Bowl. Once the turkey has been carved and the Thanksgiving sides have been served, it’s time for the grand finale—PIE. And lots of it!

With so many pie recipes on my website (and an entire chapter dedicated to them in my New York Times best-selling cookbook, Sally’s Baking 101) it can be hard to choose. My team and I narrowed the list to 40 Thanksgiving Pie Recipes for you to consider this holiday season.

But First, Pie Crust

Before browsing these Thanksgiving pie recipes, make sure you have a quality pie crust recipe. I have two classic pie crust recipes on my website, both used and trusted by readers around the world.

  1. Mix of butter & shortening: First is my favorite buttery flaky pie crust recipe which uses a mix of shortening and butter. This careful ratio of ingredients makes for a pliable dough that turns into a supremely buttery, flaky crust.
  2. All butter: My other go-to recipe is my all butter pie crust. Due to butter’s high water content, this all butter pie crust is lighter textured with more defined flakes. As the crust bakes, the butter’s water converts to steam, creating thousands of deliciously light flakes. It’s also so buttery! This one can also be found in my cookbook, Sally’s Baking 101.

Which pie crust should I choose? Because of the amount of butter in my all butter pie crust, I find that the shortening and butter pie crust is a little easier to work with. Shortening has a higher melting point than butter, so the crust holds its shape wonderfully. Both crusts are fantastic, but if you are looking to make intricate pie crust designs I highly recommend my buttery flaky pie crust.

    Hi, I faithfully use your pie crust recipe and it’s beautiful, but I find that when I make apple pies, there is always a gap. I use Courtland apples, I’m not a big fan of granny Smith. What can I do to fix that issue?

      Hi Rhona, The most common cause of pie gaps are not venting the top crust. Are you making a solid top? When you use a solid top with no vents, the steam from the cooked apples has no where to go and puffs up the crust. Be sure to cut enough vents in your top crust to allow the steam to escape.

    I love your recipes! I can’t wait to make the sweet potato pie. I plan to use brown sugar bourbon. (that stuff is great!) use only 2 tablespoons. Will your flaky crust be crisp on the bottom in the sweet potato pie? I don’t like soggy crust.

      Hi Betty, the bottom crust cooks through but if you want a crisp crust, I recommend partially blind baking it. You can use these instructions for blind baking pie dough.

    I will be making the pies this Thanksgiving. I am not a pie baker and the crust is intimidating to me. I will be making your pumpkin and apple pies. I’ve watched your videos, but I’m a little confused. Should I blind bake the crusts on both pies and do prick them so they don’t shrink. Thanks for the help.

      Hi Carol, you only need to blind bake pie crusts when the recipe calls for it. My pumpkin pie does require blind-baking, but that’s worked into the recipe instructions. Follow that recipe for details.

    It’s quite simple and your flaky pie crust will make it all the more special for the holidays! Its 3 cups of halved cranberries (fresh) to 1.5 cups raisins that have been microwaved for a minute with 1to 2 T vanilla and 2 tsp of almond extract. At least 1 cup of sugar to 1.5 c sugar and 3 T flour. The crust is best if your pre-bake the crust for 15 minutes at 425’F. ( Pierce the crust with a fork on the sides to help prevent shrinking.) Then add cranberry mixture and lattice, or traditional top crust. Bake as for your apple pie until it bubbles on a 425′ oven till the crust starts to brown and the filling bubbles.
    If the outer edges of the crust start to get too dark a foil or pie edge cover works well. Placing a cookie sheet under is also advised as it may bubble over. Cook for 45 minutes or until the filling bubbles.
    Cool on a rack.
    The filling should thicken as it cools. My meme made this at Christmas and my mom was lucky enough to have her write this one down. My mom made it every holiday and her daughters have kept this tradition going as well. Enjoy! I found a similar recipe in an old NE cookbook as well.

Out of the list I will be making your favorite cranberry sauce, the soft dinner rolls and finally the pecan praline pumpkin pie (I doing the November challenge).
